My 11 year old has a strong affinity for Tom Yam soup eversince we bought her to the coffee shop just outside our humble residence. She would ask for the same spicy 'sourish' Tom Yam. "I could cook that," I remarked after watching her sipping the soup delightfully upteenth time at the same coffeeshop. "Ok, cook then," she remarked in between the slurps . I felt challenged and began ploughing the supermarket to find the right 'instant' paste to improvise.
After a few trial and error, I discovered the following recipe (not 100% home-made but it's good enough, I think).
Tom Yam (Simplyher Syle):
Ingredients
- 1/2 a bottle of FairPrice Tom Yam paste
- 1 stalk of lemon grass
- tamarind juice
- lemon leaves
- tom yam knorr cubes
- boneless chicken
- prawns
- fried oninons and spring oninons for garnishing
- 1 large onion
- 1 garlic
- 1 tablespoon oil
Method:
- blend garlic and oninons
- mix tom yam paste with the blended garlic and oninons
- heat oil in pot and add in the mixed tom yam paste
- stir till mixture
- add 5 bowls of water
- Bring mixture to a boil and add 1-2 cubes of Tom Yam Knorr cubes
- When mixture is boiling, add tamarind juice, lime leaves and lemon grass
- add boneless chicken and prawns
