Chilli Chicken Recipe


Have you been to a Malay Wedding and taste the chilli chicken? I had the sudden craving for it the other day. Perhaps it was the thought of having to cook it for the Hari Raya that started this craving. Here's my version of chilli chicken - have fun trying.


Ingredients:
- 1 whole chicken (cut to 8 -10 pieces)
- a small packet of cashew nuts (to be grounded)

(to be grinded)
-1 1/2 bowl of dried chillies
- 2 large onions
- 1cm ginger
- 2 garlics
- 3 tablespoons cooking oil
- salt and sugar to taste
- tamarind juice

Fried shallots, green peas for granish

Method:

- wash chicken and marinate with tumeric powder and salt (leave for at least 15 minutes)
- fry chicken parts and set them aside
- heat oil in a pot and add the grinded ingredients
- once paste is dried a little, add a bowl of water
- add the grounded cashew and tamarind juice
- add salt and sugar to taste
- garnish with fried shallots and green peas
